Is there a correlation between NYU’s growing tuition and the growth of Souen Organic Ramen? Souen has been a macrobiotic Village mainstay since 1971, but with a third outpost—now along the Little India corridor, in the former Spice Cove—it's as if they're aiming to ensure that no student will miss out on the time-honored tradition of subsisting on the noodles that nourish the college noodle. As it happens, this particular spot is tiny: two-dozen seats or so at a single long table, like a low-budget dinner scene from a Harry Potter remake with bamboo-ey bolts bedecking the walls. The menu, true to Souen’s organic aesthetic, is about super bowls in which to marry noodles, broths and fixins as you wish, or else choose from a modest array of vegan appies. With the winsome Chef Yoda anything but tough on tofu, it’s fun to watch her—amid a great waitstaff—play server in so small a setting.
