Like his former boss David Chang, chef-owner Youngsun Lee—a Momofuku and Craftbar alumn—has set up a prix-fixe Korean-style East Village spot. But while Chang tends to be fusion-happy, Persimmon Kimchi's offerings are strictly traditional Korean served in a slick, modern setting. The seasonally inspired menu changes every two weeks, but follows a five-course format featuring intriguing dishes like a grilled Korean blood sausage appetizer and kimchi stew (available with pulled pork or mushrooms) main course. And even more appetizing is the fact that you don't have to fight the cutthroat Changophile hoards to get a seat at the long communal tables...for now at least.
