Malva with crème anglaise and mint
This dessert from South African restaurant Madiba was the discovery of the fair. Like a deconstructed bread pudding or tres leches cake, the delicately sweet, springy cake is a traditional South African dish. This one was made from apricots, sugar, milk, eggs and flour, and paired with a sweet crème anglaise and a sprig of mint. We'll be eating that at one of Madiba’s streetside tables all summer long.
