Two great teams in both restaurants allowing me to focus on broader scope, longer range. And my kids' homework.
Where will you be and what will you be doing this Thanksgiving?
Getting both restaurants off to a good Thanksgiving start and then traveling to my sister's home in Brooklyn for our delicious Thanksgiving cooked by all members of the family.
Your go-to Thanksgiving side dish?
Cipollini onions with honey and sherry vinegar. Cook the cipos in a sweet and sour mix of sherry vinegar, water and honey. Cook until onions are done. Reduce liquid to a syrup and glaze the onions with that. Yum!
