“In a dessert,” he says, “I like to have more chocolate and dried fruit, and slower-cooked foods—opposed to lightly cooked fruits and vegetables—in the winter. “Warmer foods in the winter, colder foods in the summer.” Foie gras, though, is timeless and is Pichet’s favorite ingredient.
