The dishes, Hamilton says, will be reasonably priced; their personality, down-to-earth. "The food is rustic, so it's coming from a poor man's perspective," he explains. "We don't have a brigade of people plating, so we don't need to charge a lot of money."
Hamilton adds that the unofficial motto should be, "Come in. Enjoy yourself. Ask questions."
