Spring Tasting Menu at Tocqueville
Brazilian-born chef Marco Moreira’s sophisticated French-American cuisine reflects ingredients both exotically far-flung and sourced as locally as the Union Square Greenmarket, so long as they’re in season. For spring, Moreira has created a lavish six-course tasting menu ($525) that includes Imperial Iranian Osetra caviar—otherwise known as the “connoisseur caviar” that was once specifically selected for the Imperial Persian king—with slow-scrambled Araucana egg and spring pea puree.
There’s also a fricassee of abalone and glass eel (translucent baby eels) over crostini with chili pepper and confit garlic oil, and a rib eye of Mishima Wagyu (a Japanese beef rarer than Kobe) with green-onion-bulb gratinee and twice-baked truffled fingerling potatoes. Given the scarcity of some of the menu's ingredients, you'll wanna prioritize this stop on your list—it might go faster than your incentive check.
