Brooklyn Flipsters: Meat
My expectations were high after learning they source their 80/20 beef (that's a muscle-to-fat ratio, and a good one at that) from Master Purveyors and grind it in-house every morning. After my first bite, I was a little disappointed. The beef flavor was fantastic, but my medium-rare burger was more medium-well and there was too much gristle in the mix.
