That was then: When husband-and-wife team David and Karen Waltuck opened Chanterelle in Soho, they offered a $35 tasting menu that changed each week. Leaving the walls bare and putting art on the menus—the first one was done by Basquiat and Madonna pal Marisol, and lower Manhattan luminaries like John Cage and Allen Ginsberg have created other versions—the restaurant naturally attracted members of the downtown gallery crowd with seasonally inspired dishes, like the long-gone bay scallops with raspberries.
