The lines are long, the slices are expensive ($4 each or $5 for a Sicilian square), but that hasn’t stopped the mobs foaming at the mouth for a piece of Dom DeMarco’s crusty Neapolitan pies. The secret’s in the top notch ingredients: The sauce is richer thanks to the addition of extra virgin olive oil, the crust is thicker than most thin pies, and the cheese is sharper—after all, there are several (in addition to mozzarella, DeMarco adds a dusting of Parmesan, Gran Padano and bufala mozzarella he gets from his hometown outside Napoli). Topped off with bits of basil grown fresh in the window and a dash of oregano, the pies are also lovingly made by DeMarco himself—a captivating show that gives you something to watch while you wait.
