The city's artisanal-pizza boom (Co., Motorino) continues apace with the opening of this West Village slice factory—sibling to other rhyme-ready pizza joints Vezzo, Gruppo and Posto. (Get it up to seven locations and we'll page Snow White.) Ultra-thin-crust pizzas are the focus here, available in 10 varities and drawing on over 60 ingredients. "We've been defined as Neapolitan…Roman…New York–style," laughs co-owner Antonio Gomez. "Take your pick!" How about "intriguing": Specialty pies include something called the Chixpotle, with homemade chicken chipotle, fresh pineapple and cilantro. The crust itself is made using high-gluten, unbleached flour, which lends "a sort of crispness and chewyness" to the texture, while several ingredients—arugula, endive, basil—are organically grown in the owners' upstate farm, in Dutchess County.
