With nearly two decades in Union Square and an empire that includes Vegas outposts, TV shows and his own line of sauces, spices and rubs, you'd think superstar chef Bobby Flay would kick back in the desert sun. But one meal at his colorful, bustling, multi-level flagship is all takes to know that the bold innovator of Southwestern gourmet cuisine still sits firmly in the saddle (recent Bruni smackdown and all). A meal of crispy quail salad, cornmeal crusted chile relleno and roasted venison with blackberry ancho chile sauce (along with some aged tequilas and mezcals) remains one of the city's most reliable.
