5 NYC chefs cook whole pigs in a "friendly" competition for charity
Even in the dead of winter, there was a decidedly mid-August vibe at Hiro Ballroom where, this past weekend, five NYC chefs got together to cook whole pigs in a "friendly" competition billed Cochon 555. (In a move surely boycotted by the American Heart Association, similar events will be held in four other U.S. cities throughout 2009.)
We spoke with the five pork fiends (plus non-competitor Zak Pelaccio), quizzing them about earliest bacon memories, curious pork pairings and the merits of the McRib.
