The Lincoln chef gives us a tour of his sleek kitchen and an exclusive preview of a new spring dish
When Jonathan Benno left his post as Thomas Keller’s second-in-command at Per Se over a year ago, he only moved a few blocks away to Lincoln Center to join the Patina Restaurant Group’s still-under-construction restaurant, Lincoln. His reasons were simple: Basically, he says, he liked the idea of being part of “such a high-profile restaurant in such a magnificent space.”
Magnificent, indeed. Last fall, Benno settled into his stunning open kitchen and has since been churning out an impeccably refined menu of seasonal Italian fare. Among the spring dishes he's currently working on: a light and fresh gnudi with fava beans. We got the first bite, as well as a tour of the space with Benno, who showed off some of his favorite kitchen gadgets.
