Fatty Johnson's Pop-Up Opening
Zak Pelaccio's latest endeavor, a pop-up in the former Cabrito space called Fatty Johnson's, opened its doors to the public on Wednesday night. Greeted with the smell of grilled cheese, and the upstairs neighbors' illicit smoking habits, one guest exclaimed, "I feel like I'm in Paris. I never realized marijuana and blue cheese smelled so great together!"
The joint was packed with food bloggers and food lovers there to see what Pelaccio and the Fatty Crew would do with comfort food—not Southeast Asian, per the usual script, but a heavy lean toward the classic pairing of ham and cheese, combined with only two days' prep for the opening. It didn't hurt that master mixologist David Wondrich was behind the stick with Fatty ‘Cue barman Adam Schuman making sure the crowd didn't run dry with drinks like the Everleigh—a white rum and Aperol concoction that paid tribute to the world's best whorehouses.
Out of the kitchen landed deviled eggs and chicken terrine banh mi, with the truly courageous going for the fried chicken stuffed with ham and 2 Sisters gouda. According to chef Corwin Kave. the Fatty Crew just spray-painted the space and put up some art and opened the doors within two days.
"This is the how we like to cook. It's comfort-y, can't go wrong food," he said when asked about the departure from Asian influences. And Zak Pelaccio said he'd do another pop-up. "Sure, maybe not in two days like we did this time. I like the idea of doing something temporary, off our normal path. It's fun." Fun it was. SEE COMPLETE GALLERY
