Zak Pelaccio guides us through his passionate Southeast Asian barbecue pit
Since August 2008, we’ve been chronicling the progress of Zak Pelaccio’s Southeast Asian barbecue project Fatty ‘Cue, which finally opened last weekend on an industrial block in South Williamsburg. We, admittedly, are a bit ADD when it comes to delays. Well, we just stop caring sometimes (see: Nuela, Lucali part two). We never stopped caring about Fatty ‘Cue. In fact, our excitement grew over time—ask their faithful PR team, whom we’ve been nagging for, literally, years. Why, though?
Sure, on a good night, Pelaccio’s established Fatty Crab branches will serve you one of NYC’s most-exciting and exotic meals, knocking out plates of pickled watermelon with crispy pork belly and short ribs braised with galangal root and kefir lime. The definitive Southeast Asian cooking simply pops. The definitive Meatpacking District and Upper West Side scenes simply annoys. Enter Fatty ‘Cue…
