The annual Pizza Show at the Javits Center, a trade event flashing the latest industrial dough dividers, eco-friendly electric ovens and cost-cutting mozzarella/provolone blends, brings the world’s pizza pros to New York City for three days of hustle. It also marks the U.S. Pizza Team Tryouts and culinary competitions, awarding big-time accolades to the small-town dough tossers and pizza chefs who make the cut.
