Yes sir, the recent NYC tradition of strip house-meets-strip club continues with the opening of this sizzler inside Sapphire Gentlemen's Club (formerly Scores). Chef Jayson Margulies used to assist Adam Perry Lang at the Bruni-approved Robert's Steak house at Penthouse Executive Club, later taking over duties after Lang's departure. So it's safe that the chef knows his way around dry-aging. The menu plays steak house standard with New York strip, filet and cuts for two (porterhouse, rib eye). Calamari, crab cakes, tuna tartar and Wagyu carpaccio can be classified as lighter bites. Prices are allusive—PR has yet to respond to our request for a menu with numbers—but we're going to assume that like the champagne room, this is no cheap date.
