Sparks serves up some of the best steaks in town: juicy filet mignon, porterhouse and sliced steak bordelaise. There are thick pork chops and meaty veal chops, and for those who don't like meat, mammoth broiled lobsters. Service is steakhouse-style, which means it can be brusque. Although the meat is justly famous, the restaurant is probably best known as the place where mobsters caught up with Paul Castellano and shot him outside, ushering in the era of the Dapper Don.
