Julian Medina, the Latin genius behind luxe Midtown Mexican spot Toloache, expand his Yerba Buena empire with a Perry Street location, which takes over the old Matador space in Greenwich Village. The project marks the chef's first partnership with his friend Chris Gilman of The Palm, so it's a safe bet that the focus here will be meat, meat, meat, assisted by Gilman's 25 years in the beef biz. On the menu: dishes like Argentine parrillada, or mixed grill, which combines rib eye, chorizo and blood sausage. As is typical of Medina's take on traditional fare, this one's got a modern twist: Instead of using the entire sausage, it's spread it on a piece of toast with a quail egg, "adding even more richness to the bite," he tells us.
