Vietnamese food just got haute. Saju, which is located in the Hotel Mela, transports diners to an enchanting atmosphere with Vietnamese cuisine that finds inspiration in France. The decor certainly helps: Teak floors and a bamboo ceiling are set against bright orange, yellow and green walls with panels of exposed brick. Executive Chef Thao Nguyen, formerly of Cafe Boulud, draws on her French training and Vietnamese heritage to craft dishes like pho bo with flank steak and Vietnamese bouillabaisse with king prawns.
